Every Day is Earth Day Party 2009

Today is Earth Day 2009.
It is a beautiful day and we are going to work on our own yard today. This is my glass Earth ball that is a hand blown yard ornament that glows at night (by solar power!)
We are going to plant these giant sunflowers soon...

Dinner was yummy guacamole, quesidillias, and coconut pineapple cake.

How cute are these cupcake toppers, I put them in frozen yogurt.

Coconut Pineapple Cake

Coconut Pineapple Cake

Ingredients:

1 1/2 cups sweetened shredded coconut (toasted)
1 stick butter
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup sugar
3 eggs
1 cup sour cream
1 can (20 oz) pineapple tidbits in own juice well drained

1. preheat oven to 350
2. grease 2 loaf pans (large size 4 cup)
3. spread coconut on  cookie sheet, place in oven for 6 minutes stirring often
4. beat butter and sugar, add eggs 1 at a time, add dry ingredients and sour cream.
5. fold in pineapple and toasted coconut (save 1/2 cup for top of loaf)
6. pour into prepared pans and sprinkle with remaining coconut
7. bake for approximately 45-55 minutes check after 30 minutes if coconut is getting too brown cover with foil. Cake is done when toothpick comes out clean

Earth Day Party 2008

April 22, 2008 we had a family Earth Day Party

We planted a tree



Dirt Cups for Dessert
Chocolate Pudding with smashed Oreos and gummy worms
An Earth friendly dinner all fresh vegetables (Vegetarian)
Cherry Pie!
This was our pledge for 2008..
We have had a very successful year, we have brought are own bags to the grocery store, we recycle even more items, we have our own water bottles and bring our lunch in re-usable containers.
What can you do to help our environment?

Carrot Cake Cupcakes with Cream Cheese Frosting and Easter Dinner Ideas

Carrot Cake Cupcakes with Cream Cheese Icing

Carrot Napkin Holders
Just roll up orange paper and place the green napkins inside
Carrot Cake Cupcakes

makes 12 cupcakes
heat oven to 350

ingredients:

combine:
1 cup all purpose flour
1 cup sugar
1 t. baking soda
1 t. cinnamon
1/2 t. ground ginger
1/2 t. ground nutmeg
1/2 t. salt

whisk together then add to dry ingredients:
1/2 cup vegetable oil
1/4 cup butter (melted)
1 t. vanilla
2 eggs

fold in:
1 1/2 cup grated carrots
1/2 cup canned crushed/drained pineapple

pour into lined cupcake papers (3/4  full)
bake for  25- 30 minutes until toothpick comes out clean

cool

Cream cheese frosting:

8 oz cream cheese
1/2 cup butter (1 stick)
1 t. vanilla
4 cups of confectioners sugar
2 tablespoons of milk (use more if needed)

blend together in mixer
