Cinco De Mayo Jello Shots

We made Jello shots in Oranges (and the web and Pinterest Loves them)

Now here are some Tequila Inspired jello shots!
Brit & Co shares a fantastic tutorial with great instructions on hollowing out the limes to make these beauties!
Bottoms up is much easier with these!

Ingredients:
This will make approximately 24 lime “wedge” jello shots…feel free to double the recipe. ;)
- 6-8 limes
- 3 ounces fresh squeezed lime juice
- 1 ounce water
- 1/4 cup sugar
- 1 package Knox unflavored gelatin (2 teaspoons)
- 3 ounces good quality tequila
- 1 ounce Grand Marnier or Cointreau (or Triple Sec if you must)
- sea salt and/or large crystal sugar, for garnish


To keep limes secure, place them in a mini muffin pan. Combine lime juice, an ounce of water and sugar to small saucepan. Sprinkle with gelatin and allow it to soak in a minute or two. Warm over medium heat, stirring until sugar and gelatin dissolve. Stir in tequila and Grand Marnier and pour into lime halves. (I recommend using something with a spout like a measuring cup).

Allow to refrigerate at least 4 hours, or preferably overnight. Once jello has set up, cut into wedges.
Serve with sugar or salt or a combo!

Margarita Cake

Yield: 16 servings
Prep Time: 25 min Cook Time: 30 min
Here's a delicious Mexican-style cake that doesn't start with a cake mix! It is a nice, light cake with a touch of margarita flavor on top. Don't skip the whipped cream and the cute lime slice garnish.

Ingredients:
CAKE:
1 3/4 cups granulated white sugar
1/2 cup butter, softened
1/2 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 Tablespoon grated lemon zest
1 Tablespoon lemon juice, freshly squeezed
2 1/2 cups all-purpose flour
1 cup plain or lemon-flavored yogurt

LIME GLAZE AND ASSEMBLY:
1/2 cup superfine granulated sugar
2 Tablespoons lime juice, freshly squeezed
1 Tablespoon water
1 Tablespoon tequila
whipped cream and lime slices, for garnish (optional)

Directions:
1. Preheat oven to 350°F. Grease and flour a 9x13-inch cake pan.

2. Prepare cake: Combine sugar, butter, baking soda and salt in a mixing bowl and beat until blended. add the eggs 1 at a time, beating well and scraping the bowl after each addition. Mix in the lemon zest and lemon juice. Add the flour and yogurt alternately, beating well after each addition.

3. Spoon the batter into prepared pan. Bake for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pan on a wire rack for 15 minutes.

4. Prepare glaze: Combine sugar, lime juice and water in a saucepan and mix well. Cook until the sugar dissolves, stirring frequently. Stir in the tequila.

5. Assembly: Invert the warm cake onto a serving platter and brush with the glaze until it is absorbed. Let stand until cool. Slice and garnish each serving with a twisted lime slice and a dollop of whipped cream.

Tips:
*If you’re having trouble inverting the cake onto a serving platter, or if you’re afraid that it might fall apart, it’s ok to just spoon the glaze over the top of the cake while it’s in the pan. Then cut neat slices and transfer to a serving platter.
*If you don't cook with alcohol, it's okay to leave it out & just make a lime glaze to drizzle on top.
*If you don't not have superfine sugar and don't wish to purchase it at your market, simply place regular granulated white sugar in your blender and give it a few whirs until it turns into superfine sugar!

Beer and Margarita Popsicles


This idea has P-A-R-T-T-Y all over it!
I think these frozen concoctions are good for year round parties!!!

Here’s how to make Corona Beer Pops:

Open a bottle and pour it into any form, wait 2 hours for it to solidify slightly and insert a  popsicle stick and freeze for another 2 hours or until becomes solid.



Strawberry Margarita Popsicles

No recipe, just an easy entertaining idea that requires some Dixie cups, popsicles sticks and Mike’s Hard Lemonade Strawberry Margarita. As a side note, the traditional margarita made with Tequila needs a much colder temperature to freeze than the tradtional home unit allows, so that’s why something like these Mike’s Hard Lemonade is better suited for making these popsicles.

To assemble: Pour and freeze the Strawberry Margarita for two hours then insert the popsicle sticks in the middle. Freeze for another two hours or until the Strawberry Margarita Popsicles solidify. Garnish with a lime and serve.

Small note, do not rim with salt until serving time as the salt will melt the pops. Alternatively, you can rim the Strawberry Margarita Pops with chunky crystal sugar for an aesethetic effect without worrying about the melting factor. 

To keep popsicles chilled as long as possible, place the serving tray in the freezer and then top  the tray with a layer of crushed iced.

Dessert Tacos for Cinco De Mayo (or any day!)

Dessert Tacos!
Cinnamon Sugar Dessert Tacos

Ingredients:
Flour tortillas
Cinnamon
Granulated sugar
Butter flavored spray
Tin foil

- Preheat oven to 350 degrees and line a baking sheet with tinfoil
- Take large pieces of tin foil (one for every taco you plan on making) and shape it into a thick "C"
- Mix together the cinnamon and sugar and pour onto a plate
- Spray both sides of a tortilla with the butter spray and coat both sides with cinnamon sugar
- Fold tortilla in half and place tinfoil "C" inside so the taco maintains its shape during baking
- Bake for 15 minutes, flipping them halfway through
- Allow tacos to cool completely before filling with your favorite ice cream and toppings

Strawberry and Banana "Pico de gallo"

Ingredients:
chopped strawberries
hopped bananas

Toppings:
Ice Cream
Whip Cream
Chocolate?

Mini Chili Pepper Pinatas and easy tutorial

Little Mini Pinatas 
Made from Crepe Paper!!!
Fill with Hot Tamales or any treat you want!!!
Here is a cute tutorial from PartyPinching.com

1. Place a 7" or 8" salad plate on cardstock and trace around the plate.  Cut the circle out of the paper and cut in half.
2. Form cone and secure with tape.
3. Wrap cone with green tissue paper, taping the bottom. Fill with your choice of candy (I used Hot Tamales).
Twist the top of the tissue paper to form a stem.
5. Using red crepe paper, make small cuts halfway through the paper to create fringe.
6. Carefully wrap the fringed crepe paper around the cone, securing it with a glue stick while wrapping.
7. Continue wrapping until you reach the top. 

If you substitute the red crepe paper for orange, they make cute little carrots for Easter too!
