Pumpkin Spice Cupcakes




Cupcakes:
  • 1 box yellow cake mix or French Vanilla cke mix
  • 1 cup canned pumpkin
  • 1 tsp pumpkin pie spice
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 4 eggs
mix all ingredients and bake at 350 for 18-22 minutes
makes 24 cupcakes

Yummy Cream Cheese Icing:

  • 8 oz cream cheese
  • 1 stick butter
  • 1 tsp vanilla
  • 2-3 tablespoons milk
  • 1 box (might need more to thicken frosting) confectioners sugar
beat with electric mixture until light and fluffy (add more confectioners sugar if too runny)
